Autumnal Cumberland Sausage Casserole

Autumnal Cumberland Sausage Casserole Ingredients

Serves 4.
Ingredients
1 large onion, chopped
1 carrot, finely chopped
1 clove garlic, finely chopped
8 thick Cumberland sausages
200ml red wine
Tin chopped tomatoes
Tin mixed beans
Sprig rosemary

 

Method

Preheat the oven to 180 degrees. In a non-stick, oven-proof pan gently fry the onion, carrot and garlic until slightly softened then add the sausages and rosemary.  Turn the sausages until browned for approximately 20 minutes. Pour in the wine and simmer for 5 minutes then add the tomatoes and beans. Bring everything to the boil and then turn the heat down and simmer for 10 minutes. Place in the oven and bake for a further 20 minutes. Serve with some crusty bread.
