Pork Fajita Wraps

Flour Tortilla Wraps
Zest and Juice of 1 Lime
Small pot of Low-fat Natural Yogurt
2 Tsp Fajita Seasoning
450g Lean Pork Loin or Leg Steaks
250g Cherry Tomatoes
2 Spring Onions
1 Yellow Pepper, deseeded & chopped
Juice of 1 Lime
1 Tbsp Fresh Coriander
Make the Salsa by mixing all the ingredients together, ready to go into the Wraps.
Cut the lean Pork Loin or Leg Steaks into thin strips and dry fry in a non-stick wok for 5-6 minutes. Add the Fajita Seasoning and cook for a further 2 minutes.
Mix together the natural yogurt and lime juice.
Serve the seasoned pork strips piled into the tortilla wraps with the zesty yogurt and some of the Cherry Tomato Salsa.
